Yipiyy finally I have one of those pasta maker babes in my kitchen..and tarrraaa! I ended up making, for my first batch ever using the machine: pasta con spinachi! Thank you ever so much for Mei, who out of the blue called me one day and said she has my electric portable kitchen by mistake when she moved out of Bali (which strangely I already forgot all about and didn’t mind) but she INSISTS she buys me something.. I said go and buy me a new oven.haha Well, she bought me a pasta maker and I LOOOVEEE it…!! I already made a batch of kwey teow noodles this afternoon for my second batch of noodles made with me new favorite :)
Why pasta con spinachi? Because that same morning I decided to make pasta, the front door neighbor gave us a big bag of spinach from their garden..and I thought, it would be kind of cool to give it back to them so they can also enjoy it…in its pasta form :D
So simple, start by wilting the spinach by boiling it about 1-2 minutes. Let it wilt but keep it green and pretty. Drain, squeeze excess water. I ended up with a fistful and tossed it in the food processor with 4 eggs. Sift 600 grams of plain flour and a pinch of salt in the mixing bowl, add spinach-egg mixture, and process dough until it becomes this ball of green delight :D Proceed by prepping it for the pasta maker. Flour plentily.
Pasta maker apparently doubles as toddler entertainment also, Lanang loved it when I asked him to roll for me! Kind of cheesy but I think it was also magical for me..watching those looong pasta come out beautifully..just look at the little bits of spinach dots lacing the pasta.
I boiled mine right away, and gave the neighbors the pasta also fresh (not dried). Had salmon in bechamel for the sauce and Lanang had lots of it for breakfast, and asked it again for lunch. :D
